Oven Roasted Asparagus Flatbread

personally i prefer flatbread when cooking at home. you may also find that flatbread is more common when dining out. technically, flatbreads usually have a thinner crust, which is sometimes achieved by using an unleavened dough (without yeast). you’ll start by just rolling it very thin and bakeing it on a pizza stone. with asparagus season on the way, we thought it was the perfect vegetable to to top our flatbread with.

Ingredients:

  • Flatbread (store bought works fine)

  • Asparagus: 2 bundles

  • Red onion: 1 ounce, sliced into slivers

  • Lemon: 1 sliced

  • Garlic Cloves: 4 cloves, minced

  • Olive Oil: ¼ cup

  • Crumbled Feta: half cup

  • Salt / Pepper (to taste)

How to make this recipe:

  1. Preheat oven to 450°.

  2. Wash your asparagus & lemons.

  3. Start slicing your red onion and lemon into thin slivers.

  4. Place your flatbread on a baking sheet.

  5. Add olive oil & minced garlic to your flatbread. Followed by your asparagus and sliced red onion.

  6. Place your flatbread in the oven once preheated.

  7. After 6 minutes, add crumbled feta cheese and return to oven for 6 to 8 more minutes or until crust is crispy and cheese is melted.

  8. Remove from oven and drizzle with olive oil & fresh lemon slices. Feel free to top more crumbled feta on top for that extra zest.

  9. Enjoy!

Chef Notes:

  • We prefer pencil thin asparagus for this recipe. It roasts faster, and it has a sweeter taste.

  • While we like feta cheese for this recipe, you can easily substitute for freshly grated parmesan cheese or asiago.

  • Got leftovers? Warm them up in a 400° oven for just a few minutes. This will crisp up the crust.

  • Serve Asparagus Flatbread with a simple salad, and it will make for a quick and easy weeknight meal.
