Cherry Tomato Salad with Mozzarella
We know what you’re thinking. No, this isn’t the baked feta dish that went viral on TikTok. It’s the same ingredients but it tastes better. This dish is also so interchangeable. Feel free to make it your own!
Ingredients:
Cherry tomatoes: 1 quart, halved (cut stems)
Basil: handful
Croutons: cube stale white bread (bread of choice) and roast in oven for approx. 8-10 minutes at 400 degrees or until lightly toasted.
Garlic Powder: ⅛ teaspoon
Salt & Pepper : to taste
Fresh Mozzarella (Optional)
For Dressing:
Extra Virgin Olive Oil: 2 tablespoons
Balsamic Vinegar: 2 tablespoons
Salt & Pepper: to taste
Fresh Garlic: 2 cloves minced
How to make this recipe:
Gather your mixing bowl and ingredients together.
Slice the tomatoes in half and, if using plum or larger tomatoes, core them to remove the seeds. Chop the tomatoes into chunks (whatever size you desire). If using grape, cherry, or another small tomato, cut in half so they will absorb the flavors of the dressing.
Place the chopped tomatoes in a large bowl. Add the olive oil, balsamic vinegar, garlic, and herbs (if using). Toss well.
Transfer to a serving dish and season with salt and pepper to taste. Or plate the salad individually for your guests and garnish with a sprig of basil.

Chef Notes:
Feel free to make this salad ahead of time, and cover the bowl tightly with plastic wrap or place salad in an airtight plastic container. When ready, pull it out and serve. Keep in the fridge for a day or two.
